I almost never purchase any kind of jam or jelly because it has sooo much added sugar! The added sugar sweetens the jam and also helps the pectin to set.
I bought some beautiful, fresh strawberries at our farmers market and decided to experiment with chia jam. Y’all this has got to be one of the simplest, life-changing recipes ever!
Tammy’s Tips for Making 3-Ingredient Chia Jam
Chia Seeds – These seeds might be small, but they are packed with nutrients! They are high in fiber, protein, and omega-3 fatty acids. They are also rich in calcium and a good source of B-vitamins, iron, and powerful antioxidants.
Chia seeds are absorbent and expand when they are wet. They become gelatinous when added to the reduced strawberries and take the place of the pectin and crazy amount of sugar. So amazing!
Strawberries – I try to eat berries every day. They are high in fiber, antioxidants, and vitamin C. Strawberries also have a good amount of folate and potassium. They have a low glycemic index which means they will cause a lower and slower rise in your blood sugar.
Some of the health benefits include aiding digestion, boosting immunity, reducing inflammation, and supporting cardiovascular health.
Pure Maple Syrup – I tested this recipe several times and found that 1-2 tablespoons of maple syrup is perfect. No syrup was a little tart, but it will all depend on your strawberries. Test before you add.
Serving Suggestions – 3 cups of strawberries makes about 2 cups of jam. You can adjust measurements to make as much or as little as you’d like. It makes a great gift!
- Swirl into yogurt, cottage cheese, or oatmeal.
- Spread on toast, bagels, pancakes, waffles, crepes, or muffins. Also delish on a pb&j sandwich.
- Add to a pancake board, bagel bar, or charcuterie board.
- Give it as a gift in a mason jar with a ribbon tied around it! You can even add the recipe with it. The recipient will LOVE it!
- 1. Add strawberries to pot.
- 2. Cook down for about 8 minutes and mash with potato masher. Taste for sweetness and add maple syrup if desired.
- 3. Add chia seeds to jar or bowl.
- 4. Stir in cooked strawberries.
- Let cool and refrigerate to set.

Ingredients
- 3 cups strawberries, quartered
- 1-2 tbsp pure maple syrup
- 3 tbsp chia seeds
Instructions

Place strawberries in medium saucepan over medium heat. Use a potato masher or spoon to mash strawberries so they release some of their juices. Let strawberries continue to cook and break down, stirring occasionally. After about 8 minutes, mash the strawberries to desired consistency. Test for sweetness and stir in 1-2 tablespoons maple syrup if desired. Remove from heat.

While strawberries are cooking, add chia seeds to jar or glass container. Pour strawberries over chia seeds and stir. Let cool.

Jam will begin to thicken in about 5 minutes and continue to thicken the longer it sits. You can use immediately or store in refrigerator for 1-2 weeks.
Recipe Notes
If you prefer a smoother jam, you can puree with an immersion blender. Just stir chia seeds into the pot of strawberries after you remove from heat and puree with an immersion blender until desired consistency.
