I love combining avocados and mangos in my summer recipes. This recipe for Shrimp Mango and Avocado Salad with Cilantro Lime Dressing was on repeat in our house all last summer. Another one of my avocado/mango obsessions is this recipe for salsa. It’s versatile, loaded with nutrients, and so refreshing!
Health Benefits of Avocado Mango Salsa
Avocados – Avocados have a significant source of fiber, folate, potassium, vitamin C and Vitamin K. Did you know they have more potassium than bananas? They are rich in omega-3 fatty acids and high in monounsaturated fat. In fact, most of the calories in an avocado come from fat, but not to worry because it’s a good fat that is essential for our bodies.
Mangos – Aside from being delicious, Mangos are packed with nutrients that have several health benefits. They are high in antioxidants that protect your cells against free radicals. Mangos are an excellent source of vitamins A and C. They contain plenty of water and fiber which can aid in digestive health. They are also a good source of magnesium, potassium, and folate.
When choosing a mango, rather than focus on color, focus on how the mango feels and smells. Gently squeeze the mango. A ripe mango will give slightly and it will be fragrant. If your mango isn’t quite ripe yet, you can place it out at room temperature until ripe. Check out this video for tips on how to cut a mango. https://www.mango.org/how-to-cut-a-mango/
Black Beans – Studies have shown that eating black beans can protect against heart disease, weight gain, and diabetes. They are high in fiber and contain antioxidants that fight inflammation. Black Beans contain resistant starch which can aid in keeping blood sugar stable and they are high in protein. One cup of black beans provides 15 grams of protein.
What Do You Eat Avocado Mango Salsa With?
- Chips – Serve with chips for an easy summer appetizer. I love Siete Tortilla Chips.
- Meat or Fish – So delish over grilled meat and fish. My favorite is salmon.
- Tacos – Add to your favorite tacos!
- Black Bean Burgers – Omit the black beans from the salsa and top your black bean burger.
- Shrimp Lettuce Wraps – Mix with grilled shrimp and serve in lettuce wraps.
