Tammy’s Tips for Making Blueberry Lemon Chia Pudding
Chia Seeds – These seeds might be small, but they are packed with nutrients! They are high in fiber, protein, and omega-3 fatty acids. They are also rich in calcium and a good source of B-vitamins, iron, and powerful antioxidants.
Protein – Chia seeds are one of the few plant sources of complete protein. 1 ounce of chia seeds contains 4.7 grams of protein. This recipe has about 6-10 grams of protein depending on the type of milk you choose.
For adults, this is not enough protein for a meal. So, I recommend adding a scoop of collagen or plain protein powder. See my protein post for more information.
Milk – I use Malk brand almond milk, but any milk can be used.
Texture – For a thicker pudding use less milk. For a thinner pudding use additional milk. Be sure to stir your pudding thoroughly to avoid clumps. You can give it an additional stir after it has been in the fridge for an hour or so.
Prep Ahead – Chia pudding will last up to 5 days in the fridge, making it an excellent meal prep option. I like to make enough for several days in advance.
Make it Your Own – Don’t be afraid to make it your own. The beauty of chia pudding is that it is so easy to customize. Raspberries can be added to the blueberries or substituted. You could also add additional toppings.
Additional Topping Ideas – nuts, granola, hemp hearts, flax seed, coconut flakes, or fresh mint.
