Creamy Broccoli Soup is nutritious and delicious! This vegan-friendly recipe includes cauliflower, nutritional yeast, and white sweet potatoes to make it rich and creamy with a hint of cheese flavor. You would never know it’s dairy-free! Can be made in your crockpot or instant pot which makes it a perfect cozy weeknight meal!
This recipe did not start out as a creamy broccoli soup. I was actually experimenting and the original recipe didn’t involve broccoli and wasn’t supposed to be soup at all. My boys were eating it and said it tasted like broccoli soup without the broccoli.😫
I ditched the other recipe and did some tweaking and came up with this dairy-free creamy broccoli soup. So, while the original recipe was a fail, the soup that evolved from it was a win! I love happy accidents!
If you’ve been around here for a while, you know that I love to incorporate as many veggies as I can when I making soup or chili. Aside from broccoli, this soup has white sweet potatoes, carrots, cauliflower, and onion. Eat a bowl of this soup and you will be getting fiber, protein, antioxidants, calcium, iron, phytonutrients, potassium, beta-carotene, and vitamins A, C, E, and K. Yes, PLEASE!
Tammy’s Tips for Making Creamy Broccoli Soup
Broth – You can use vegetable broth or chicken broth for this recipe. I like using homemade chicken bone broth, but veggie broth works too.
White Sweet Potatoes – White sweet potatoes or Hannahs have tan skin and an off-white interior. They have a texture similar to a traditional white potato but they are sweeter. I have not tried this recipe with a regular sweet potato or a traditional white potato. I think an orange-fleshed sweet potato would be too sweet. A traditional white potato should work fine, but the soup will not have that slightly sweet taste.
Broccoli – I have made the soup by putting all of the broccoli into the slow cooker or instant pot and pureeing it for a completely smooth texture. I’ve also set half of the broccoli aside and roasted before serving the soup. I then added the roasted broccoli to the pureed soup to give it more texture. Both ways are delish!
Freezer Friendly – Leftovers can be frozen. I love freezing this soup in individual mason jars for lunches. Leave some room at the top of the jar for the soup to expand in the freezer. (I scooped some out of these jars before I froze them.)

Creamy Broccoli Soup is nutritious and delicious! This vegan-friendly recipe includes cauliflower, nutritional yeast, and white sweet potatoes to make it rich and creamy with a hint of cheese flavor. You would never know it's dairy-free! Can be made in your crockpot or instant pot which makes it a perfect cozy weeknight meal!
Ingredients
- 4 cups white sweet potato, peeled and cubed
- 2 cups carrots, peeled and sliced
- 2 crowns of broccoli, chopped into florets reserve half if desired, see notes
- 1 head of cauliflower, chopped into florets
- 1 cup onion, diced
- 4 cloves garlic, minced
- 6 cups low sodium vegetable broth or chicken bone broth
- 1/2 cup nutritional yeast
- salt and pepper to taste
Instructions

*Place all ingredients in Instant Pot. See Notes!

Secure lid and set the vent nozzle to sealing position.

Select manual mode for 8 minutes on high pressure.

When timer goes off, carefully use the quick release method.

After all of the pressure is released, remove the lid. Use an immersion blender to puree soup until it reaches desired consistency. Alternatively, you can remove the soup in batches and puree in a regular blender.
For Crockpot / Slow Cooker

Add all of the ingredients to slow cooker and cook on low for 8 hours or high for 4 hours or until veggies are cooked through. Use an immersion blender to puree soup until it reaches desired consistency. Alternatively, you can remove the soup in batches and puree in a regular blender.
