Every year since my kids were little, I have always baked a special dessert on Valentine’s Day. I’m down to one baby left at home, and chocolate lava cake is his favorite dessert. This year, I decided it was time to come up with a different recipe. The one I used to make was a crock-pot recipe that called for a boxed cake mix and boxed chocolate pudding. I based the recipe on a recipe I received a long time ago from one of my book club friends.
These individual chocolate lava cakes use quality ingredients that I can pronounce and are just as easy to make as my old crock-pot recipe. Not to mention they are much prettier.
I love making individual desserts because they make a beautiful presentation, and they are perfectly portioned. No leftovers for overindulging. 😉
Tammy’s Tips For Healthier Chocolate Lava Cakes
Milk – Plant-based milk or whole milk both work in this recipe.
Fat – Coconut oil or grass-fed butter can be used.
Ramekins – You will need 4 one-cup ramekins for this recipe. You can easily double this recipe if you need more than 4 servings.
Sugar – I used coconut sugar. I did not try subbing honey or pure maple syrup.
Toppings – Homemade whipped cream using coconut milk or heavy cream, fresh raspberries, and a little fresh mint are the perfect finishing touch! A scoop of homemade vanilla ice cream is also delish!

Healthier Chocolate Lava Cakes

Ingredients
Chocolate Lava Cake Batter
- 1/2 cup coconut sugar
- 2 tbsp softened grass-fed butter or coconut oil
- 1/2 cup plant-based milk or whole milk
- 1 cup whole wheat flour
- 2 tbsp cocoa
- 2 tsp baking powder
- 1/2 tsp salt
Batter Topping
- 1/4 cup coconut sugar
- 2 tbsp cocoa
- 1 cup boiling water
Optional Toppings
- homemade whipped cream coconut milk or heavy whipping cream
- homemade vanilla ice cream
- fresh raspberries or strawberries
- fresh mint
Instructions

Preheat oven to 350 degrees F. Grease 4 one-cup ramekins and place them on a baking sheet.
Chocolate Lava Batter

Cream 1/2 cup of coconut sugar and butter or coconut oil together until smooth. Add milk and mix. Add flour, baking powder, cocoa, and salt. Mix well. The batter will be thick. Divide batter equally into ramekins.
Batter Topping

Mix coconut sugar and cocoa together and sprinkle evenly over batter in each ramekin.

Poor boiling water over batter in each ramekin. Bake for 15-18 minutes.

Serve warm with favorite toppings.
