Earlier this year I perfected a basic salsa recipe, and I’ve been counting down the days until peach season in The Hill Country so I could add a little Fredericksburg twist! This salsa is DELISH. I made a big batch thinking we would have enough left for our RV adventure this week, and had to make MORE in the morning before we left because we devoured the first batch!
I had it with Siete Tortilla Chips and over orange roughy. Seriously some of the best salsa I’ve ever eaten and sooo easy to make.
Tammy’s Tips for Making Roasted Peach Salsa
Peaches – Ripe peaches work best in this recipe. If your peaches aren’t ripe, you may want to roast an extra peach or two. If your peaches are overripe, you may want to use a little less depending on how sweet you like it. Tom likes it with two ripe peaches and I prefer it with three.
Grill – I roasted the fruit and veggies in the oven. Alternatively, you can grill on high for about 20 minutes or until slightly blackened.
Whether you roast or grill, you do not need to peel the skins off of your fruit or veggies. You will need to remove the stem, seeds, and membranes from your jalapeno unless you like it HOT! I also recommend adding your jalapeno a little at a time and testing your salsa until you reach your desired amount of heat. My first batch was pretty dang spicy which is how we like it. When I make it for others, I don’t make it quite so spicy.

Roasted Peach Salsa
This sweet and spicy Roasted Peach Salsa is perfect for all of your summer festivities. Sweet peaches and onions are roasted with ripe tomatoes and spicy jalapenos and then blended together to create a quick and easy salsa that tastes truly amazing! Enjoy with tortilla chips for an appetizer or pile high on your favorite grilled meat.
Ingredients
- 4 large vine ripe tomatoes
- 2-3 medium sized, ripe peaches, halved and pits removed
- 1 large sweet onion, sliced into 5 rounds
- 1 jalapeno
- avocado oil
- salt and pepper to taste
- handful of fresh cilantro use as much or a little as you like
Instructions

Set broiler to high. Place peaches, tomatoes, onions, and jalapeno on a lined baking sheet. Brush with avocado oil and sprinkle tomatoes, onion, and jalapeno with salt and pepper. Broil for 10-15 minutes or until everything is blackened.

Let cool slightly. Remove stem and seeds from jalapeno.

Transfer roasted fruit and veggies with juices to a food processor or blender along with a handful of cilantro. Pulse until everthing is coarsely pureed. Add salt and pepper to taste. If you are concerned about it being too spicy, add your jalapeno a little at a time.

Serve chilled with chips or pile high on your favorite grilled meat.
