There was a request in one of my clean eating Facebook groups for a copycat recipe for McAlister’s Fire Roasted Vegetable Soup. This list of ingredients was included with the request:
Fire Roasted Vegetable [Carrot, Celery, Onion, Tomato, Corn Oil, Yeast, Potato Flour, Salt, Onion, Garlic, Flavoring, Tomatoes, Tomato Juice, Citric Acid, Calcium Chloride, Red, Green & Yellow Bell Pepper, Onions, Zucchini, Carrots, Tomato, Corn, Seasoning (Cornstarch, Garlic, Sugar, Chipotle Base [Red Chili Peppers, Chipotle Peppers, Salt, Natural Smoke Flavoring], Hydrolyzed Wheat Gluten, Maltodextrin, Mesquite Smoke Flavor, Silicon Dioxide, Salt), Pasta (Semolina Wheat, Egg Whites, Niacin, Iron, Thiamin Mononitrate, Riboflavin, Folic Acid), Celery, Spinach, Potatoes, Sodium Acid Pyrophosphate, Lemon Juice )
I decided I would give it a shot using my trusty slow cooker. You know I’m all about using the slow cooker, especially for soup! The result was a delicious smokey flavored soup that resembles a tortilla soup minus the tortillas. LOL!
I’ve never had McAlister’s version, but if it tastes like this I can see why someone would want the recipe. Definitely one of the best soups I’ve ever had! So yum and all I did was throw some of the whole ingredients listed above along with some broth and seasonings into my crockpot!
Tammy’s Tips For Fire Roasted Tomato and Vegetable Soup
To achieve the smokey flavor I used Frontera Chipotle Pepper Adobo with Roasted Tomato. I found it at Target. Most chipotle peppers in adobo sauce have refined oils and some have high fructose corn syrup. They usually come in a small can and most often I only end up using one or two peppers.
I like this Frontera brand because it is a jarred sauce and is more like a condiment so less waste. It does have a small amount of evaporated cane sugar but it is less than 0.5 grams.
The McAlister’s version of this soup has couscous in it. I did not add couscous to mine. You could serve the soup over couscous but I think it is delish as is!

Slow Cooker Fire Roasted Tomato and Vegetable Soup
This fire roasted tomato and vegetable soup is full of smokey flavor and loaded with healthy vegetables. Just add all of the ingredients to the slow cooker and at dinner time you will have a hearty bowl of delicious, comforting vegetable soup! Sure to become a weeknight favorite any time of year.
Ingredients
- 2 28-ounce cans fire roasted crushed tomatoes
- 6 cups broth of choice
- 1 6-ounce can tomato paste
- 1 medium onion, chopped
- 2 medium potatoes, diced I leave the skin on
- 3 carrots, sliced
- 2 ribs celery, chopped
- 1 zucchini, chopped
- 1/2 each of red, green and yellow pepper, chopped
- 2 cups frozen corn
- 2 tbsp chipotle pepper adobo sauce You could use 2 chipotle peppers in adobo, minced or a little chipotle powder
- 4 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp cumin powder
- 2 bay leaves
- cilantro, sour cream, and or avocado for toppings
Instructions

Place all of the ingredients in slow cooker and cook on high 4-5 hours or low 6-8 hours.

Add favorite toppings and serve!
