Mix oats, nuts, sunflower seeds, shredded coconut, and coconut sugar together in large bowl. Add olive oil, syrup, and vanilla and thoroughly combine. Let mixture sit for a few hours to blend flavors.
Heat oven to 350 degrees.
Line a jelly roll pan with parchment paper
Spread mixture evenly on baking sheet. Toast in oven about 20 minutes until medium golden brown, stirring once after 10 minutes.
Remove from oven and let cool. Add dried fruit and store in airtight container up to 2-3 weeks.
Perfect for yogurt parfaits, cereal, or as is for a snack!
You can bake right after preparing if you do not have time to let the granola sit for a few hours. It's still delicious!
