Buffalo Chicken Skewers with Blue Cheese Dip

Ingredients

  • 1 lb skinless boneless chicken tenders
  • 2 tbsp olive oil or butter
  • 1 1/2 cups buffalo sauce I use Frank's
  • carrot and celery sticks
  • chives for garnish
  • 10 medium size bamboo skewers, soaked for at least 30 minutes

Blue Cheese Dip

  • 1/2 cup plain regular yogurt or plain Greek yogurt
  • 1/2 cup sour cream
  • 2 cloves garlic, minced
  • 2 tbsp blue cheese, crumbled

Instructions

For the Blue Cheese Dip

  1. Mix yogurt, sour cream, and garlic together in a small bowl. Stir in blue cheese. Refrigerate until ready to use.

For the Chicken

  1. Sprinkle chicken with salt and pepper. Thread onto skewers forming a type of ribbon effect.

  2. Combine hot sauce and butter in a small pan. Heat on the stove until just starting to boil. Remove from heat.


  3. Grill chicken skewers for approximately 2 minutes on each side on a preheated medium-high grill. Turn and brush with the hot sauce and cook another 2 minutes on each side, brushing with the sauce. Continue grilling until chicken is cooked through, about 10-12 minutes total.

Garnish skewers and blue cheese dip with chives. Serve with celery and carrot sticks.
