Mix yogurt, sour cream, and garlic together in a small bowl. Stir in blue cheese. Refrigerate until ready to use.
Sprinkle chicken with salt and pepper. Thread onto skewers forming a type of ribbon effect.
Combine hot sauce and butter in a small pan. Heat on the stove until just starting to boil. Remove from heat.
Grill chicken skewers for approximately 2 minutes on each side on a preheated medium-high grill. Turn and brush with the hot sauce and cook another 2 minutes on each side, brushing with the sauce. Continue grilling until chicken is cooked through, about 10-12 minutes total.
